Jim, the research you're quoting makes some valid points, though
I don't personally agree with its reasoning of insulin being the
cause for a rise in BP when ingesting starches, grains, breads,
etc.
In my opinion, it is a rise in phosphorus that antagonizes other
minerals, such as zinc, calcium, and particularly potassium.
This in turn allows sodium to be pushed up, unless the Na/P and
Na/K ratios are lowered by whatever means, or the loss in K, Mg,
Ca, Zn, etc is compensated for.
I also disagree with the opinions of some other respondents to
this thread that triglycerides have an insignificant effect on
atherosclerosis. My own medical charts show that triglycerides
had been a causative factor of arterial plaque in about twice as
many cases as cholesterol, and I have read other research data
that puts it even as high as 4:1. I've also only seen VLDL trig
problems following longterm consumption of SIMPLE carbs, but not
as a result of longterm COMPLEX carb intake (though there are
other non carb-related causes as well).
